Incredible Chocolate Chip Cookies

The delight of mixing measuring out and mixing together carefully selected ingredients, watching your kid swirl around a whisk, standing mesmerized over a stand mixer steadily paddling the dough into a cohesive form, I’m pretty sure it’s safe to say I’m rather intrigued, mildly obsessed? with this whole art of cookie making. Since childhood I have dearly loved all things baking and as I grew older that loved transferred easily to cooking as well. I consider this a dear gift, because so much of our lives revolve around a table and the meals and treats shared over it.

Today I wanted to share with you our absolute favorite chocolate chip cookie recipe. For me, this is the O N E. Having made cookies, at this point, likely hundreds of times in my life this is no small statement. What is more is that this cookie is gluten-free and of course it can be made with gluten-full (winking smile) flour as well, fear not. So, I know you’ve heard people say, “It’s gluten-free, but you can’t tell the difference.” Inside some of you grimace, cringing because you know you will be able to tell from the moment the item hits your mouth. So, when I say to you you cannot tell the difference, please understand I am not propagating some myth, I’m just telling you like it is. This cookie is the real deal and you would not know it was gluten-free if I gave it to you. This is something that was extraordinarily important to me as we eat gluten-free on the regular. I wanted to make certain that our child who cannot have gluten was able to experience bread, cookies, & cakes the way they were meant to be enjoyed.

Cooking Notes:

*Butter should be at room temperature

*Use real vanilla extract.

*I love the Simple Truth Organic brand of semi-sweet chocolate chips.

*Namaste Gluten Free Organic or Bob Red Mills Cup for Cup

*Grease cookie sheet; if it is a nonstick pan it should be fine as is

Directions:

*Cream butter & sugars together

*Add room temperature egg & then vanilla.

*Blend just until combined with flour, salt, & baking powder.

*Bake at 350 for 9-`10 minutes (Do not overbake).

*Cool completely on cookie sheet
